- 5 medium zucchini
- 1 medium onion
- 1 carrot, grated
- 1 can cream of chicken soup
- 1 c. sour cream
- 1/2 c. butter
- 1 (8 oz.) pkg. Pepperidge Farm herb flavored stuffing
Directions

1Cook sliced zucchini and onion 7 minutes; drain.

2Add grated carrot, soup and sour cream to zucchini mixture.

3In separate pan, melt butter and add stuffing mix.

4Place 1/2 stuffing mixture in bottom of casserole dish with low sides.

5Add all the vegetable mixture.

6Place remaining half of stuffing mixture on top.

7Bake at 350° for 25 to 30 minutes.
