Zucchini Casserole

  • 5 medium zucchini
  • 1 medium onion
  • 1 carrot, grated
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1/2 c. butter
  • 1 (8 oz.) pkg. Pepperidge Farm herb flavored stuffing

Directions

    Cook sliced zucchini and onion 7 minutes; drain.

    Add grated carrot, soup and sour cream to zucchini mixture.

    In separate pan, melt butter and add stuffing mix.
  4. 4
    Place 1/2 stuffing mixture in bottom of casserole dish with low sides.

    Add all the vegetable mixture.

    Place remaining half of stuffing mixture on top.

    Bake at 350° for 25 to 30 minutes.
