Zucchini Casserole

Ingredients

  • 4 medium zucchini, sliced
  • 1/2 lb. boiled ham, sliced in strips
  • 1/2 c. chopped pecans
  • 1 c. whipping cream or half and half cream
  • 3 eggs
  • 1/2 c. grated Parmesan cheese
  • juice of 1 lemon
  • garlic powder to taste

Directions

    In a saucepan, place zucchini and cover with water.

    Add lemon juice and bring to boil.

    Once boiling, reduce heat and simmer a minute or two.

    Remove from heat and drain well.

    Butter a 10-inch pie pan and combine zucchini with ham, nuts, garlic powder, salt and pepper.

    In a blender, combine whipping cream, eggs and Parmesan cheese, mixing thoroughly.

    Pour cream mixture over zucchini and ham and bake at 350° for 35 minutes.
