  • 1 c. shortening, room temperature
  • 1 c. granulated sugar
  • 1 c. packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 to 2 c. shredded zucchini (uncooked)
  • 1 c. chopped nuts (optional)
  • 1 box raisins
  • 3 1/2 c. flour (sifted)
  • 1 tsp. baking powder

Directions

    Cream shortening and sugar until light.

    Stir in and beat eggs and vanilla until fluffy.

    Stir in zucchini and raisins.

    Mix flour and baking soda.

    Stir into batter.

    Drop by teaspoon onto ungreased cookie sheet and bake until golden brown at 350° (10 to 12 minutes).

    If they are small, bake at 375°.
