- 2 potatoes, peeled and cubed
- 1 Tbsp. margarine
- 1 Tbsp. olive oil
- 6 boned and skinned chicken breast halves, cut into thirds
- 1/2 c. unbleached white flour
- 1/3 c. water
- 1 large can (28 oz.) tomatoes with juice
- 1 large green pepper, chopped
- 3/4 c. chopped onion
- 2 cloves garlic, minced
- 3/4 tsp. each: oregano and cumin
- 1/2 tsp. salt
- 1/4 c. raisins
- 1/2 c. stuffed green olives

1Preheat oven to 425°.

2Place potatoes in saucepan; cover with water and boil for 10 minutes.

3Put margarine and olive oil in shallow baking pan and place in oven until margarine melts.
