Ingredients

  • 2 potatoes, peeled and cubed
  • 1 Tbsp. margarine
  • 1 Tbsp. olive oil
  • 6 boned and skinned chicken breast halves, cut into thirds
  • 1/2 c. unbleached white flour
  • 1/3 c. water
  • 1 large can (28 oz.) tomatoes with juice
  • 1 large green pepper, chopped
  • 3/4 c. chopped onion
  • 2 cloves garlic, minced
  • 3/4 tsp. each: oregano and cumin
  • 1/2 tsp. salt
  • 1/4 c. raisins
  • 1/2 c. stuffed green olives

    Preheat oven to 425°.

    Place potatoes in saucepan; cover with water and boil for 10 minutes.

    Put margarine and olive oil in shallow baking pan and place in oven until margarine melts.
