- 3 eggs
- 1 1/3 c. sugar
- 1/2 c. vegetable oil
- 1/2 c. orange juice
- 1 tsp. almond extract
- 2 1/2 c. all-purpose flour
- 2 tsp. ground cinnamon
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. ground cloves
- 1 1/2 c. shredded zucchini
Directions

1In a mixing bowl, beat eggs, sugar, oil, orange juice and extract.

2Combine dry ingredients; add to the egg mixture and mix well.

3Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-25 minutes or until cupcakes test done.

4Cool for 10 minutes before removing to a wire rack.

5Cool and frost.
