Zucchini Curry Soup

Ingredients

  • 3 c. zucchini, cubed
  • 2 c. onion, diced
  • 2 tsp. curry powder
  • 1/2 tsp. garlic powder or 1 clove garlic, crushed
  • 3 c. chicken broth
  • 1/4 c. white wine
  • 1/2 c. cream
  • 1 c. sour cream
  • salt and pepper
  • dash of dill
  • milk

Directions

    Saute onion in 1/2 stick margarine.

    Combine with zucchini, curry powder, garlic, and broth.

    Simmer 45 to 60 minutes.

    Puree in blender or food processor.

    Cool and add remaining ingredients, adding milk to get consistency you like.

    Chill at least 6 hours. Delicious!
