- 2 pounds zucchini
- 1 each onions
- 1 each garlic cloves
- 2 tablespoons ghee (clarified butter)
- 1 tablespoon curry powder
- 1 can tomatoes
- 3 tablespoons coconut paste
- 2 tablespoons mustard seeds
Directions

1Peel, seed and dice zucchini.

2Mince onion and garlic.

3Puree tomatoes together with the juice.

4Steam onion and garlic in the clarified butter.

5Stir in curry powder.

6Add tomatoe puree and cook until it thickens a bit.

7Dissolve coconut paste in the tomatoe puree.

8Add diced zucchini and steam for about 30 minutes until tender.

9Roast mustard seeds in a pan and sprinkle over the stew.
