Ingredients

  • 1/4 c. chopped onion
  • 1 clove garlic, minced
  • 1 Tbsp. cooking oil
  • 1 (16 oz.) can chopped tomatoes
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. sugar
  • 1 tsp. oregano
  • 1/4 tsp. thyme
  • 1 small bay leaf
  • 8 manicotti shells
  • 2 beaten eggs
  • 2 c. grated Mozzarella cheese
  • 1 1/2 c. Ricotta cheese or creamed cottage cheese
  • 1/2 c. Parmesan cheese
  • 1/4 c. snipped parsley

Directions

    For sauce, in a 2-quart saucepan cook onion and garlic in hot oil until tender.

    Add undrained tomatoes, tomato sauce, sugar and 1 teaspoon oregano, thyme and bay leaf.

    Bring to boiling and reduce heat.

    Simmer, uncovered, for 20 to 25 minutes, or until thickened.

    Remove from heat, discard bay leaf.
