  • 3/4 cups Shredded Zucchini
  • 1 whole Egg
  • 1 Tablespoon Grated Parmesan Cheese
  • 1/4 teaspoons Crushed Red Pepper
  • Salt And Pepper, to taste

Directions

    In a skillet, heat oil over medium heat. Add shredded zuchini, sprinkle with salt and pepper, and cook for about 3 minutes.

    Make a well for the egg and crack egg into pan. Cover and cook until egg is at desired doneness.

    Top with Parmesan, crushed red pepper and more salt and pepper. Enjoy!
