- 2 Tbsp. butter
- 3 Tbsp. chopped onion
- 6 firm zucchini
- 1 c. heavy cream
- 2 egg yolks, lightly beaten
- 1 egg, lightly beaten
- 1/4 tsp. nutmeg
- salt and fresh ground pepper
- 1/4 c. grated mild cheese (Swiss or Gruyere)
Directions

1Melt butter in large skillet; add onion.

2Cook, stirring until onion is wilted.

3Trim and discard ends of zucchini; slice into thin rounds and add to skillet.

4Cook briefly; stir.

5Spoon mixture into buttered casserole.

6Blend cream, egg yolks, egg and nutmeg.

7Add salt and pepper to taste.

8Pour mixture over zucchini.

9Sprinkle with cheese.

10Bake at 350° for 30 minutes or until custard is lightly set.
