Zucchini Flan

  • 2 Tbsp. butter
  • 3 Tbsp. chopped onion
  • 6 firm zucchini
  • 1 c. heavy cream
  • 2 egg yolks, lightly beaten
  • 1 egg, lightly beaten
  • 1/4 tsp. nutmeg
  • salt and fresh ground pepper
  • 1/4 c. grated mild cheese (Swiss or Gruyere)

Directions

    Melt butter in large skillet; add onion.

    Cook, stirring until onion is wilted.

    Trim and discard ends of zucchini; slice into thin rounds and add to skillet.

    Cook briefly; stir.

    Spoon mixture into buttered casserole.

    Blend cream, egg yolks, egg and nutmeg.

    Add salt and pepper to taste.

    Pour mixture over zucchini.

    Sprinkle with cheese.

    Bake at 350° for 30 minutes or until custard is lightly set.
