  • 6 c. zucchini
  • 1/2 c. lemon juice
  • 6 c. sugar
  • 1 pkg. pectin
  • 1 (8 oz.) can crushed pineapple
  • 1 (6 oz.) pkg. jello (apricot or orange)

Directions

    Peel and grate zucchini.

    Add lemon juice.

    Simmer for 1 hour. Add sugar, pectin and pineapple.

    Bring to boil.

    Boil 6 minutes. Add jello.
