Zucchini Lasagna

Ingredients

  • 1 lb. ground beef
  • 1/3 c. chopped onion
  • 15 oz. can tomato sauce
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. oregano
  • 1/4 tsp. basil
  • 3 to 4 medium zucchini
  • 5 to 6 lasagna noodles
  • 1 c. cottage cheese
  • 1 egg
  • 2 Tbsp. flour
  • 1/2 lb. shredded Mozzarella cheese

Directions

    Brown beef with onion.

    Add tomato sauce and next 4 spices; let simmer 5 minutes.

    Slice zucchini and layer noodles and zucchini.

    Cover with mixture of cottage cheese, egg and flour, then layer of ground beef. Repeat layers until all used.

    Cook in a 350° oven for 40 minutes.

    Top with shredded Mozzarella cheese and return to oven until cheese is melted.
