  • 2-3 Medium to Large zucchini, washed but not peeled
  • 1 Tblsp. crushed salt, or as much as needed
  • 4 garlic cloves, minced
  • 1 tsp. fennel seeds
  • 1/4 tsp. crushed red-pepper flakes
  • 1 Tblsp. Basil
  • 1 pound ground turkey or ground turkey sausage
  • 1 medium sweet/yellow onion, diced
  • 2-14.5 oz cans of stewed tomatoes (Italian flavored optional)
  • 1 can 6 oz tomato paste (Italian flavored optional)
  • 1 cup of Ricotta cheese
  • 2 beaten eggs
  • 1/2 tsp black pepper
  • 2 Tblsp of chopped parsley (fresh)
  • 1/2 cup freshly grated Kraft Parmesan cheese
  • 1 pound Mozzarella cheese, grated
  • Pam no stick spray
  • Parsley or other Garnish as desired

Lay out paper towels on clean counter top and place your freshly cut Zucchini out without overlapping. Sprinkle with crushed salt on each side. You may need to repeat. Let the zucchini seep the water out for at least 15 minutes.""
