Zucchini Lemon Bars

- 3 eggs
- 1 1/4 c. sugar
- 1 c. oil
- 1/4 c. lemon juice
- 1 3/4 c. grated zucchini
- 2 c. flour
- 1 tsp. salt
- 1/4 tsp. baking powder
- 1 c. chopped nuts
- 2 tsp. grated lemon peel
Directions

1In a medium bowl, combine eggs, sugar, oil, lemon juice and lemon peel.

2Beat until well blended.

3Add zucchini.

4Sift together the flour, baking soda, salt and baking powder.

5Stir into zucchini mixture and then fold in nuts.

6Pour into a greased 9 x 13-inch pan and bake at 350° for 45 minutes or until cake springs back when touched.

7Cool in pan.

8Frost with glaze, if desired.
