  • 3 to 4 zucchini
  • 1 tsp. salt
  • 3 to 4 eggs
  • salt and pepper to taste
  • 2 Tbsp. bread crumbs
  • 1 Tbsp. grated Parmesan cheese
  • pinch of oregano
  • 2 bay leaves

Directions

    Peel zucchini.

    Cut in half and half again.

    Boil in salted water for about 5 minutes, then drain well.

    Put on bottom of a greased dish.
