Zucchini Mousaka

  • 2 Tbsp. vegetable oil
  • 3 medium zucchini
  • 1 medium sliced onion
  • 1 lb. ground beef
  • 1 (8 oz.) can tomato sauce
  • 1 clove minced garlic
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 egg, beaten slightly
  • 1 c. cottage cheese
  • 1/4 c. Parmesan cheese, grated

Directions

    In vegetable oil, cook zucchini and sliced onion until tender. Place in bottom of a 2-quart casserole dish.

    In the same skillet, brown the ground beef and drain.

    Add tomato sauce. Add minced garlic, salt and cinnamon and mix.

    Pour meat mixture over zucchini.
