Ingredients
- 1 1/2 c. all-purpose flour
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. nutmeg
- 1/4 tsp. baking powder
- 1 c. sugar
- 1 egg
- 1/4 c. cooking oil
- 1 c. finely shredded, unpeeled zucchini
- 1/4 tsp. lemon peel or 1/2 tsp. lemon juice
- 1/2 c. chopped nuts (optional)
Directions

1Mix together first 5 ingredients.

2In separate bowl, beat together sugar, zucchini and egg.

3Add oil and lemon peel (or juice); mix well.

4Combine flour mixture with zucchini mixture. Add nuts.

5Pour batter into greased loaf pan.

6Bake in 350° oven for 55 to 60 minutes or until wooden toothpick inserted in center comes out clean.

7Let cool 10 minutes and then remove from pan. Cool.
