Ingredients

  • 1 1/2 c. all-purpose flour
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. nutmeg
  • 1/4 tsp. baking powder
  • 1 c. sugar
  • 1 egg
  • 1/4 c. cooking oil
  • 1 c. finely shredded, unpeeled zucchini
  • 1/4 tsp. lemon peel or 1/2 tsp. lemon juice
  • 1/2 c. chopped nuts (optional)

Directions

    Mix together first 5 ingredients.

    In separate bowl, beat together sugar, zucchini and egg.

    Add oil and lemon peel (or juice); mix well.

    Combine flour mixture with zucchini mixture. Add nuts.

    Pour batter into greased loaf pan.

    Bake in 350° oven for 55 to 60 minutes or until wooden toothpick inserted in center comes out clean.

    Let cool 10 minutes and then remove from pan. Cool.
