- 4 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 3 1/2 c. unsifted flour
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 3/4 tsp. baking soda
- 2 c. grated, unpeeled zucchini (approximately 1 large)
- 1 c. walnuts, chopped
- 1 c. raisins or dates
- 1 tsp. vanilla
Directions

1Beat eggs.

2Gradually beat in sugar, then oil.

3Combine all dry ingredients, adding alternately with zucchini.

4Stir in raisins or dates, walnuts and vanilla.

5Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans.

6Bake on lowest rack at 350° for 55 minutes.

7Cool on wire racks for 10 minutes.

8Freezes well after cool.
