Zucchini Nut Bread

  • 4 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 3 1/2 c. unsifted flour
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 3/4 tsp. baking soda
  • 2 c. grated, unpeeled zucchini (approximately 1 large)
  • 1 c. walnuts, chopped
  • 1 c. raisins or dates
  • 1 tsp. vanilla

Directions

    Beat eggs.

    Gradually beat in sugar, then oil.

    Combine all dry ingredients, adding alternately with zucchini.

    Stir in raisins or dates, walnuts and vanilla.

    Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans.

    Bake on lowest rack at 350° for 55 minutes.

    Cool on wire racks for 10 minutes.
