- 3 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 1 Tbsp. vanilla
- 2 c. coarsely grated zucchini, unpeeled
- 2 c. flour
- 1 Tbsp. cinnamon
- 2 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. baking powder
- 1 c. coarsely chopped walnuts
Directions

1Beat the eggs.

2Add the sugar, oil and vanilla until thick and lemon colored.

3Stir in the zucchini.

4Sift together the flour, cinnamon, baking soda, salt and baking powder.

5Fold in the walnuts.

6Add to the first mixture.

7Pour into 2 greased and floured loaf pans.

8Bake at 350° for 1 hour.

9Cool 10 minutes and remove from pans.
