- 3 eggs
- 1 c. oil
- 2 c. sugar
- 3 c. flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1 tsp. cinnamon
- 2 c. zucchini, grated
- 2 tsp. vanilla
- 1 c. nuts
Directions

1Beat eggs, oil and sugar together.

2Add flour, salt, soda, baking powder and cinnamon.

3Add zucchini and vanilla; mix well. Fold in chopped nuts.

4Pour into well-greased and floured loaf pans (2).

5Bake at 325° for 1 hour.

6Cool in pans 10 minutes. Remove from pans and cool on racks.

7Freezes well.
