Zucchini Omelet

Ingredients

  • 1 Tbsp. butter or margarine
  • 1 medium onion, chopped
  • 3 small zucchini, chopped
  • 6 eggs
  • 3 Tbsp. Parmesan cheese
  • 1/4 tsp. garlic powder
  • 2 Tbsp. milk or water
  • 1 c. grated Mozzarella cheese
  • salt and pepper to taste

Directions

    Mix eggs, Parmesan cheese, garlic, milk or water, salt and pepper.

    Saute onion; add zucchini until mushy.

    Combine all ingredients and pour in a skillet on medium heat.

    When omelet is half cooked on one side, flip over and cook omelet until egg is cooked and cheese is melted.

    Serve with crusty bread and garden fresh salad.
