Zucchini Omelet

- 1 Tbsp. butter or margarine
- 1 medium onion, chopped
- 3 small zucchini, chopped
- 6 eggs
- 3 Tbsp. Parmesan cheese
- 1/4 tsp. garlic powder
- 2 Tbsp. milk or water
- 1 c. grated Mozzarella cheese
- salt and pepper to taste
Directions

1Mix eggs, Parmesan cheese, garlic, milk or water, salt and pepper.

2Saute onion; add zucchini until mushy.

3Combine all ingredients and pour in a skillet on medium heat.

4When omelet is half cooked on one side, flip over and cook omelet until egg is cooked and cheese is melted.

5Serve with crusty bread and garden fresh salad.
