Zucchini Pickles

Ingredients

  • 1 gal. zucchini, peeled, seeded and wedged
  • 1 c. pickling lime
  • 6 c. vinegar
  • 10 c. sugar
  • 2 Tbsp. pickling spice

Directions

    Dissolve lime in 1 gallon of water in 2 1/2 to 3 gallon glass jar or container.

    Add zucchini and soak 24 hours.

    Pour off lime water and rinse 10 minutes until water runs clear.

    Allow to drain on paper towel, terry cloth or screen for 3 hours.

    In a large stainless steel or enamel kettle, add vinegar and sugar; stir well.

    Add pickling spice.

    Add zucchini and let stand for 24 hours.

    Bring to a rolling boil and boil for 35 minutes.

    Add green food coloring, if desired.

    Fill jars, cap and enjoy.
