Ingredients
- 1 gal. zucchini, peeled, seeded and wedged
- 1 c. pickling lime
- 6 c. vinegar
- 10 c. sugar
- 2 Tbsp. pickling spice
Directions

1Dissolve lime in 1 gallon of water in 2 1/2 to 3 gallon glass jar or container.

2Add zucchini and soak 24 hours.

3Pour off lime water and rinse 10 minutes until water runs clear.

4Allow to drain on paper towel, terry cloth or screen for 3 hours.

5In a large stainless steel or enamel kettle, add vinegar and sugar; stir well.

6Add pickling spice.

7Add zucchini and let stand for 24 hours.

8Bring to a rolling boil and boil for 35 minutes.

9Add green food coloring, if desired.

10Fill jars, cap and enjoy.
