Zucchini Pickles

Ingredients

  • 2 lbs. fresh, firm zucchini
  • 2 small onions
  • 1/4 cup salt (pickling salt is best)
  • 2 cups sugar
  • 1 tsp. celery salt
  • 1 tsp. tumeric
  • 2 tsp. mustard seed
  • 3 cups cider vinegar

Directions

    Wash zucchini and cut into thin slices.

    Peel and cut onions into quarters and then slice very thin.

    Add to water and add salt.

    Let stand for 2 hours.

    Drain throughly.

    Bring remaining ingredients to a boil.

    Pour over zucchini and onions.

    Let stand for 2 hours.

    Bring all ingredients to a boil for 5 minutes.
