- 2 lbs. fresh, firm zucchini
- 2 small onions
- 1/4 cup salt (pickling salt is best)
- 2 cups sugar
- 1 tsp. celery salt
- 1 tsp. tumeric
- 2 tsp. mustard seed
- 3 cups cider vinegar
Directions

1Wash zucchini and cut into thin slices.

2Peel and cut onions into quarters and then slice very thin.

3Add to water and add salt.

4Let stand for 2 hours.

5Drain throughly.

6Bring remaining ingredients to a boil.

7Pour over zucchini and onions.

8Let stand for 2 hours.

9Bring all ingredients to a boil for 5 minutes.
