Zucchini Pie

Ingredients

  • 1 pkg. refrigerated crescent rolls
  • 1/4 lb. butter or margarine
  • 8 oz. Mozzarella cheese, grated
  • 2 eggs, beaten
  • 4 c. thinly sliced zucchini
  • 1 c. finely chopped onion
  • 2 Tbsp. parsley
  • 1/4 tsp. oregano
  • 1/4 tsp. basil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. mustard (your favorite type)

Directions

    Line bottom of pan with crescent rolls.

    Spread mustard over crust (coat).

    Saute zucchini, onion and parsley in butter until zucchini is just tender.

    Cool slightly.

    Mix together with beaten eggs and cheese.

    Add oregano, basil, salt and pepper.

    Pour into pie shell.

    Bake at 350° for 20 minutes or until golden brown. Let stand before slicing.
