- 1 pkg. refrigerated crescent rolls
- 1/4 lb. butter or margarine
- 8 oz. Mozzarella cheese, grated
- 2 eggs, beaten
- 4 c. thinly sliced zucchini
- 1 c. finely chopped onion
- 2 Tbsp. parsley
- 1/4 tsp. oregano
- 1/4 tsp. basil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. mustard (your favorite type)
Directions

1Line bottom of pan with crescent rolls.

2Spread mustard over crust (coat).

3Saute zucchini, onion and parsley in butter until zucchini is just tender.

4Cool slightly.

5Mix together with beaten eggs and cheese.

6Add oregano, basil, salt and pepper.

7Pour into pie shell.

8Bake at 350° for 20 minutes or until golden brown. Let stand before slicing.
