  • 1 large zucchini, peeled and sliced
  • 1 c. sugar
  • 1/2 c. packed brown sugar
  • 2 Tbsp. cornstarch
  • 1 1/2 tsp. cream of tartar
  • 1 1/2 tsp. cinnamon
  • dash of nutmeg
  • 1 recipe 2 crust pie pastry
  • butter

Directions

    Cook the zucchini in salted water in saucepan for 2 minutes; drain. Combine dry ingredients in bowl.

    Layer dry mixture and zucchini in pastry lined pie plate until all ingredients are used. Dot with butter.

    Top with remaining pastry. Bake at 350° for 45 to 60 minutes or until browned.
