- 2 zucchini, cut up
- 2 garlic cloves, chopped fine
- 2 Tbsp. butter
- 1/2 c. dry white wine
- fresh grated Parmesan cheese
- 2 Tbsp. olive oil
- 1 c. long grain rice
- 1 1/2 c. chicken stock
- salt to taste
Directions

1Saute zucchini in oil and garlic.

2Remove from pan.

3Add rice and brown in butter.

4Place rice in a saucepan; add soup stock and white wine.

5Bring to boil without lid.

6Add salt.

7Place zucchini on top of rice.

8Do not stir.

9Cover and simmer.

10Add cheese when serving.
