  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 3 c. flour
  • 3 tsp. vanilla
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 c. raisins
  • 3 tsp. cinnamon
  • 1 c. chopped walnuts
  • 1 c. crushed pineapple, drained
  • 2 c. zucchini, grated

Directions

    In a large bowl, beat eggs by hand until frothy, about 3 minutes. Add oil, sugar, vanilla and zucchini; mix well with spatula.

    Add dry ingredients and mix well. Spray 2 loaf pans with a cooking spray and lightly flour.

    Divide batter evenly between pans.

    Bake at 325° for 1 hour and 20 minutes. Cool in pans, then gently turn out onto serving dish.
