- 3 eggs
- 1 c. oil
- 2 c. sugar
- 3 c. flour
- 3 tsp. vanilla
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 c. raisins
- 3 tsp. cinnamon
- 1 c. chopped walnuts
- 1 c. crushed pineapple, drained
- 2 c. zucchini, grated
Directions

1In a large bowl, beat eggs by hand until frothy, about 3 minutes. Add oil, sugar, vanilla and zucchini; mix well with spatula.

2Add dry ingredients and mix well. Spray 2 loaf pans with a cooking spray and lightly flour.

3Divide batter evenly between pans.

4Bake at 325° for 1 hour and 20 minutes. Cool in pans, then gently turn out onto serving dish.
