Ingredients

  • 1 small onion, sliced
  • 2 medium zucchini, cut into cubes
  • 1/3 c. diced green pepper
  • salt and pepper to taste
  • chopped parsley (optional)
  • 2 Tbsp. vegetable oil
  • 2 tomatoes, peeled and quartered
  • 1 small clove garlic, crushed
  • grated Parmesan cheese

Directions

    Saute onion in oil in a skillet until tender.

    Stir in zucchini, tomatoes, green pepper, garlic and seasonings.

    Cover and cook over medium heat 10 to 12 minutes or until vegetables are tender, stirring occasionally.

    Transfer vegetables to a serving dish and sprinkle with cheese and parsley, if desired.

    Yield: 4 to 6 servings.
