  • 4 c. sliced, peeled zucchini
  • 1 c. onion
  • 1/4 c. margarine
  • 1/2 c. chopped parsley or 2 Tbsp. parsley flakes
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. basil
  • 1/4 tsp. oregano
  • 2 eggs
  • 2 c. shredded Mozzarella cheese
  • 1 (8 oz.) can crescent rolls or 1 (9-inch) pie crust
  • 2 tsp. Dijon mustard

Directions

    Saute zucchini and onion in margarine until tender.

    Stir in seasonings.

    Blend eggs and cheese. Stir into vegetable mixture. Spread rolls or pie crust in a 12 x 8-inch baking dish or 9-inch pie pan.

    Spread mustard over crust.

    Pour in vegetable mixture. Bake at 375° for 18 to 20 minutes or until knife comes out clean. Cool 10 minutes.
