- 4 c. shredded zucchini
- 1 c. chopped onion
- 1/2 c. margarine
- 2 Tbsp. flake parsley
- 1/2 tsp. salt and pepper
- 1/4 tsp. garlic
- 1/4 tsp. basil
- 1/4 tsp. oregano
- 2 eggs, beaten
- 8 oz. Mozzarella cheese
- 8 crescent rolls
- 2 Tbsp. Dijon mustard
Directions

1Saute zucchini and onions in margarine.

2Add seasonings.

3Beat eggs, add cheese and then add to vegetable mixture.

4Separate crescent rolls and press into ungreased pan.

5Spread Dijon mustard on crust.

6Top with vegetable mixture.

7Bake at 375° for 18 to 20 minutes (finished baking when knife inserted in middle comes out clean).

8Let stand for 10 minutes before serving.
