  • 4 c. shredded zucchini
  • 1 c. chopped onion
  • 1/2 c. margarine
  • 2 Tbsp. flake parsley
  • 1/2 tsp. salt and pepper
  • 1/4 tsp. garlic
  • 1/4 tsp. basil
  • 1/4 tsp. oregano
  • 2 eggs, beaten
  • 8 oz. Mozzarella cheese
  • 8 crescent rolls
  • 2 Tbsp. Dijon mustard

Directions

    Saute zucchini and onions in margarine.

    Add seasonings.

    Beat eggs, add cheese and then add to vegetable mixture.

    Separate crescent rolls and press into ungreased pan.

    Spread Dijon mustard on crust.

    Top with vegetable mixture.

    Bake at 375° for 18 to 20 minutes (finished baking when knife inserted in middle comes out clean).

    Let stand for 10 minutes before serving.
