Zucchini Refrigerator Pickles

  • 1 gal. sliced zucchini
  • 4 sliced onions
  • 5 heads dill
  • 4 c. sugar
  • 2 c. vinegar
  • 1 c. water
  • 1/2 c. pickling salt
  • 1 tsp. turmeric
  • 1 tsp. celery seed
  • 1 tsp. mustard seed

Directions

    Pack zucchini, onions and dill in gallon glass or plastic jar. Combine rest of ingredients and bring to a full rolling boil. Let cool.

    Pour over zucchini.

    It will not cover all but more juice will form after a couple of hours.

    Keep in refrigerator.
