- 1/3 c. Bisquick
- 1/4 c. Parmesan cheese
- salt and pepper to taste
- 2 eggs, beaten
- 2 c. zucchini, shredded
- 2 Tbsp. butter or margarine
Directions

1Mix Bisquick and cheese together.

2Add to beaten eggs and stir until moistened.

3Fold shredded zucchini into mixture.

4Melt butter or margarine in skillet.

5Drop 2 tablespoons of mixture for each round into skillet and cook 2 or 3 minutes on each side.
