Zucchini Rounds

  • 1/3 c. Bisquick
  • 1/4 c. Parmesan cheese
  • salt and pepper to taste
  • 2 eggs, beaten
  • 2 c. zucchini, shredded
  • 2 Tbsp. butter or margarine

Directions

    Mix Bisquick and cheese together.

    Add to beaten eggs and stir until moistened.

    Fold shredded zucchini into mixture.
  4. 4
    Melt butter or margarine in skillet.
  5. 5
    Drop 2 tablespoons of mixture for each round into skillet and cook 2 or 3 minutes on each side.
