- 3 Tbsp. butter/margarine
- 3 c. unpeeled zucchini, cut in 1/8-inch slices
- 1/4 c. green onion, sliced thin
- 1 Tbsp. minced fresh basil
- 1 large tomato, peeled and cubed
- 1 c. shredded Mozzarella
- 1/4 c. grated Parmesan cheese
Directions

1In a 10-inch pan, melt butter/margarine over medium heat.

2Stir in zucchini, onion and basil.

3Toss to coat all vegetables evenly. Cook, stirring occasionally until zucchini is almost tender-crisp, about 8 minutes.

4Stir in tomato cubes; cook 1 minute.

5Sprinkle with cheeses.

6Cover and let stand for a minute or so until cheeses begin to melt.

7Serves 6.
