- 4 c. grated zucchini
- 1 c. chopped onion
- 1/2 c. grated Parmesan cheese
- 1/2 c. oil
- 1 c. Bisquick
- 2 Tbsp. chopped parsley
- 1 tsp. salt
- 1/8 tsp. pepper
Directions

1Grease and flour a 13 x 9-inch Pyrex pan.

2Grate zucchini and chop onion.

3Beat eggs.

4Add oil and Bisquick; blend thoroughly. To this mixture, add remaining ingredients.

5Mix well.

6Pour into baking dish and bake at 350° for 35 to 40 minutes.
