  • 5 eggs
  • 4 c. grated zucchini
  • 1 c. chopped onion
  • 1/2 c. grated Parmesan cheese
  • 1/2 c. oil
  • 1 c. Bisquick
  • 2 Tbsp. chopped parsley
  • 1 tsp. salt
  • 1/8 tsp. pepper

    Grease and flour a 13 x 9-inch Pyrex pan.

    Grate zucchini and chop onion.

    Beat eggs.

    Add oil and Bisquick; blend thoroughly. To this mixture, add remaining ingredients.

    Pour into baking dish and bake at 350° for 35 to 40 minutes.
