Zucchini Soup

  • 1 large zucchini
  • 2 lb. potatoes, peeled and sliced
  • 1 large onion, chopped
  • 1 (32 oz.) can chicken broth
  • spices to taste (oregano, garlic, salt and pepper)

    Put into large soup pot.

    Cook until everything is soft. Puree in blender.

    Put back into soup pot.

    Add 1 can evaporated milk.
