Zucchini Soup

- 2 cloves garlic, chopped
- 1 large onion, chopped
- 2 Tbsp. olive oil
- 4 c. zucchini, cubed
- 1 rib celery
- 1 large potato, cubed
- 1 tsp. parsley
- 2 c. chicken broth
- 1/2 tsp. pepper
- 1 tsp. salt
Directions

1Saute garlic and onion in olive oil.

2Add zucchini, celery, potato and parsley.

3Cook together until vegetables are softened. Add chicken broth (or 2 cups water and 2 chicken bouillon cubes), pepper and salt.

4Cook for 30 minutes.

5Put through blender; adjust seasonings.

6May be served hot or cold.
