- 1 lb. Italian sweet or hot sausage (casings removed)
- 2 lb. zucchini, sliced into 1/2-inch pieces
- 2 c. celery, sliced into 1/2-inch pieces
- 2 green peppers, cut into 1/2-inch pieces
- 2 cans tomatoes (28 oz. each)
- 1 c. chopped onions
- 1 tsp. Italian seasoning
- 1 tsp. sugar
- 1 tsp. oregano
- 2 tsp. salt
- 1/2 tsp. basil
- 1/4 tsp. garlic powder
Directions

1Brown sausage in a large Dutch oven; drain off fat.

2Add celery and cook for 10 minutes.

3Add the rest of the ingredients, except green peppers; cook, covered, for 10 more minutes.

4Add green peppers before serving, then top with grated cheese (if you like).
