Ingredients

  • 1 lb. Italian sweet or hot sausage (casings removed)
  • 2 lb. zucchini, sliced into 1/2-inch pieces
  • 2 c. celery, sliced into 1/2-inch pieces
  • 2 green peppers, cut into 1/2-inch pieces
  • 2 cans tomatoes (28 oz. each)
  • 1 c. chopped onions
  • 1 tsp. Italian seasoning
  • 1 tsp. sugar
  • 1 tsp. oregano
  • 2 tsp. salt
  • 1/2 tsp. basil
  • 1/4 tsp. garlic powder

Directions

    Brown sausage in a large Dutch oven; drain off fat.

    Add celery and cook for 10 minutes.

    Add the rest of the ingredients, except green peppers; cook, covered, for 10 more minutes.

    Add green peppers before serving, then top with grated cheese (if you like).
