- 3 zucchini (6 c.), sliced 1/4-inch
- 1 can cream of mushroom soup
- 1 c. sour cream
- 1 c. shredded carrots
- 1 (18 oz.) pkg. Pepperidge Farm herb stuffing
- 1/2 c. melted butter
Directions

1Cook zucchini in boiling water 5 minutes.

2Drain.

3Combine soup and sour cream.

4Stir in carrots.

5Fold in drained zucchini. Combine stuffing and butter.

6Spread 1/2 of stuffing mixture in bottom of 11 x 13-inch pan.

7Spoon vegetable mixture on top. Sprinkle remaining stuffing mixture over vegetable mixture.

8Bake at 350° for 25 to 30 minutes.
