Zucchini Squash Bisque

Ingredients

  • 6 medium zucchini peeled
  • 1 onion medium
  • 4 sliced carrots peeled +, or 4 handfuls of mini carrots
  • 6 chicken bullion cubes
  • 4 cups water
  • 1 block cream cheese 1/3 less fat for lighter
  • 1 pinch pepper

Directions

    Bring all ingredients (minus the cream cheese) to a boil, lower to a summer and cover

    Cook covered until all real tender (30-45 min) (cover keeps liquid in).

    Remove from heat- add block of cream cheese. Blend with immersion (wand) blender until smooth. Add pepper as needed to taste. This doesn't need salt because of the bullion.
