Zucchini Squash Bisque

- 6 medium zucchini peeled
- 1 onion medium
- 4 sliced carrots peeled +, or 4 handfuls of mini carrots
- 6 chicken bullion cubes
- 4 cups water
- 1 block cream cheese 1/3 less fat for lighter
- 1 pinch pepper
Directions

1Bring all ingredients (minus the cream cheese) to a boil, lower to a summer and cover

2Cook covered until all real tender (30-45 min) (cover keeps liquid in).

3Remove from heat- add block of cream cheese. Blend with immersion (wand) blender until smooth. Add pepper as needed to taste. This doesn't need salt because of the bullion.
