- 3 eggs, beaten until light
- 1/2 c. oil
- 2 tsp. vanilla
- 2 c. sugar
- 2 c. finely chopped, unpeeled squash
- 3 c. flour
- 2 tsp. soda
- 1 tsp. baking powder
- 1 tsp. salt
- 3 tsp. cinnamon
Directions

1Add the oil, vanilla, sugar and squash to the beaten eggs.

2Mix well the sifted flour, soda, baking powder, salt and cinnamon; add flour mixture to squash mixture.

3Stir in 1 cup of chopped nuts. Bake in 5 1/2 x 10 1/2-inch loaf pan for 1 hour or until done at 325°.
