- 3 c. grated zucchini squash
- 1 c. walnuts
- 3 c. sugar
- 1 tsp. soda
- 1 1/2 tsp. cinnamon
- 1 1/2 c. oil
- 3 c. flour, sifted
- 4 eggs
- 1/2 tsp. salt
- 2 tsp. baking powder
Directions

1Combine squash, sugar, oil and eggs (leave the peel on the squash and the cake will have a soft green color or you can peel the squash if you want).

2Mix in dry ingredients and nuts.

3Bake in Bundt pan 1 1/2 hours at 300°.

4Can frost or glazed.

5Great with cream cheese frosting.
