Zucchini Squash Cake

  • 3 c. grated zucchini squash
  • 1 c. walnuts
  • 3 c. sugar
  • 1 tsp. soda
  • 1 1/2 tsp. cinnamon
  • 1 1/2 c. oil
  • 3 c. flour, sifted
  • 4 eggs
  • 1/2 tsp. salt
  • 2 tsp. baking powder

Directions

    Combine squash, sugar, oil and eggs (leave the peel on the squash and the cake will have a soft green color or you can peel the squash if you want).

    Mix in dry ingredients and nuts.

    Bake in Bundt pan 1 1/2 hours at 300°.

    Can frost or glazed.

    Great with cream cheese frosting.
