Ingredients

  • 3 lbs. chicken thighs or possibly 3 lbs. pork butt
  • 1/2 c. vinegar
  • 1/4 c. soy sauce
  • 3 cloves garlic, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon peppercorns, crushed
  • 1 bay leaf, crushed

    Cut chicken pcs in half if thighs are large.

    If using pork, cut pork into 1 1/2 inch pcs.

    In saucepan, combine all ingredients.

    Let stand for 1 to 3 hrs.

    Bring to a boil.

    Cover, lower heat, and simmer for 30 min (45 min for pork).

    Remove cover and simmer 15 more min or possibly till liquid evaporates and chicken or possibly pork is lightly browned.

    Makes 6 servings.
