Ingredients
- 3 lbs. chicken thighs or possibly 3 lbs. pork butt
- 1/2 c. vinegar
- 1/4 c. soy sauce
- 3 cloves garlic, crushed
- 1/4 teaspoon salt
- 1/4 teaspoon peppercorns, crushed
- 1 bay leaf, crushed
Directions

1Cut chicken pcs in half if thighs are large.

2If using pork, cut pork into 1 1/2 inch pcs.

3In saucepan, combine all ingredients.

4Let stand for 1 to 3 hrs.

5Bring to a boil.

6Cover, lower heat, and simmer for 30 min (45 min for pork).

7Remove cover and simmer 15 more min or possibly till liquid evaporates and chicken or possibly pork is lightly browned.

8Makes 6 servings.
