  • 2 tbsp salt
  • 1 cup cooked rice refrigerated over night
  • 1 cup grated carrot
  • 2 cup cheddar cheese grated(mild)
  • 1/3 tsp sesame oil
  • 1 1/2 tsp parmesan cheese

    preheat oven 450F Fahrenheit scoop out zucchini leaving bottom solid sprinkle a pinch of salt in bottom of zucchini cups

    mix rice cheese oil and carrots together

    stuff the zucchini cups

    spay pan with nonstick spray

    bake 20 minutes

    sprinkle top with parmesan cheese
