Ingredients
- 6 to 7 lb. big zucchini squash
- 4 lb. dry onions
- 5 Tbsp. salt
- 2 1/2 c. vinegar
- 6 1/2 c. water
- 3 1/2 c. sugar, white or brown
- 1 tsp. dry mustard
- 1/2 tsp. white pepper
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 tsp. ground cloves or whole cloves
- 1 tsp. ground turmeric
- 1 tsp. ground ginger
Directions

1Large zucchini are best, 3 to 4 pounds each.

2Cut zucchini squash in chunk pieces (do not peel).

3Cut onions in half, then slice.

4Put in large kettle and pour salt over squash.

5Let set while you mix the syrup.

6Mix all other ingredients in another pot and bring to a boil.

7Stir well to mix sugar.

8Pour over squash and onions and boil about 25 to 30 minutes.

9Stir often.

10When squash looks transparent, pour into sterilized jars and seal.
