Zucchini Tart

  • 1 onion medium
  • 8 1/16 cups zucchini
  • salt
  • 2 tablespoons olive oil
  • 2 eggs
  • 2 handfuls breadcrumbs

Directions

    Cut the onion into small pieces and sautee in oil. Meanwhile, wash the zucchini and cut into thin circles .

    Put the zucchini into the pan with the onion, add salt and cook (you can do this in a pressure cooker and it will take about three minutes, but using a normal skillet it will take about 15-20 minutes).

    Beat the eggs, add salt and pepper if you'd like. When the zucchini are ready add eggs and about 1 cup of breadcrumbs to zucchini/onion mixture.

    Mix well and place in a prepared baking dish. Cover the surface with a few more breadcrumbs to make it more crispy.

    Put it in the oven at 350F for 20 minutes. In the last five minutes turn on the broiler to make the surface more crispy.
