Zucchini With Rice

Ingredients
- 2 medium zucchini
- 1/2 onion, chopped
- 1 Tbsp. margarine
- 3/4 c. cottage cheese, drained
- 3/4 c. cooked rice
- 1 egg, beaten
- 1 tsp. salt
- 1/4 tsp. chervil
- 1/4 tsp. thyme
- sharp Cheddar cheese, shredded
Directions

1Saute onion in margarine.

2Cook zucchini in boiling water 5 minutes.

3Cut lengthwise.

4Scoop out centers and dice.

5Add to the diced zucchini the other ingredients, all except the cheese. Lightly salt the zucchini shells.

6Fill shells with zucchini mixture.

7Place in greased baking dish.

8Cover with foil.

9Bake at 350° about 25 minutes.

10Remove from oven.

11Uncover.
-
12Sprinkle with cheese.

13Return to oven for 5 to 10 minutes, until cheese melts.
