Zucchini With Rice

Ingredients

  • 2 medium zucchini
  • 1/2 onion, chopped
  • 1 Tbsp. margarine
  • 3/4 c. cottage cheese, drained
  • 3/4 c. cooked rice
  • 1 egg, beaten
  • 1 tsp. salt
  • 1/4 tsp. chervil
  • 1/4 tsp. thyme
  • sharp Cheddar cheese, shredded

Directions

    Saute onion in margarine.

    Cook zucchini in boiling water 5 minutes.

    Cut lengthwise.

    Scoop out centers and dice.

    Add to the diced zucchini the other ingredients, all except the cheese. Lightly salt the zucchini shells.

    Fill shells with zucchini mixture.

    Place in greased baking dish.

    Cover with foil.

    Bake at 350° about 25 minutes.

    Remove from oven.

    Uncover.

    Sprinkle with cheese.

    Return to oven for 5 to 10 minutes, until cheese melts.
