- 1 cup chopped fresh mushrooms
- 12 cup sliced green onion
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- 14 teaspoon salt
- 14 teaspoon oregano
- 14 teaspoon pepper
- 8 cups chicken stock, warmed
- 34 cup orzo pasta
- 2 egg yolks, beaten
- 1 cup light cream
- 14 cup grated parmesan cheese
- salt and pepper

- 1 cup ground chicken breast
- 2 tablespoons Italian parsley, chopped
- 2 egg whites
- 12 cup fine breadcrumbs
- 1 tablespoon grated parmesan cheese
- 14 teaspoon salt
- 14 teaspoon pepper
Directions

1Make meat balls by combining all ingredients.

2Chill until firm enough to form into balls.

3Saute mushrooms and onions in oil until soft.

4Sprinkle with lemon juice, salt, pepper and oregano while cooking.

5Heat chicken stock to boiling, add mushrooms and onions and orzo.

6Boil 3 minutes.

7Add chicken balls and boil until balls float to the top, Turn off heat and combine yolks, cream and cheese.

8Blend well and whisk into hot soup.

9Adjust seasoning, to taste.

10Whisk until serving temperature and serve garnished with chopped parsley.
