Ingredients
- 4 whole potatoes
- 1 whole white onion
- paprika to taste
- 1/2 c. butter
- 2 Tbsp. fresh parsley, minced
Directions

1Peel potatoes and grate them into cold water.

2Let stand for 5 minutes.

3Drain and squeeze all liquid out by handfuls.

4Dry on clean toweling.

5Melt half the butter in a large skillet; add grated onion and pepper and saute for two minutes.

6Add the drained potatoes.

7Sprinkle thickly with paprika; cover tightly and cook over very low heat for 15 minutes.

8Check occasionally to be sure the potatoes are not sticking to the bottom of the pan, but do not stir or disarrange.

9Add extra butter, if needed, by lifting potatoes carefully with a spatula.

10Carefully slide potatoes onto a warm plate.

11Melt remaining butter in skillet and invert potatoes in skillet.

12Continue to cook another 10 minutes.
