  • 5 cups each all purpose flour and 100% wheat bran high fibre cereal
  • 2 cups firmly packed brown sugar
  • 1 cup dates
  • 1 Tbsp. each baking soda and ground cinnamon
  • 4 cups buttermilk*
  • 1 cup oil
  • 4 eggs

Directions

    COMBINE flour, cereal, brown sugar, dates, baking soda and ground cinnamon in a large bowl.

    Mix together buttermilk, oil and eggs.

    Stir into dry ingredients until moistened.

    SPOON batter into 24 greased muffin tins.

    BAKE at 375F (190C) for 25 to 30 minutes or until golden brown.
