Minestrone Soup

Ingredients

  • 3 slices bacon, chopped fine
  • 1 c. chopped onion
  • 1/2 c. chopped celery
  • 2 large garlic cloves, minced
  • 1 tsp. crushed basil leaf
  • 1 can beef broth
  • 1 can bean and bacon soup
  • 1 1/2 cans water
  • 1 can tomatoes
  • 1/2 c. uncooked macaroni
  • 1/2 tsp. salt
  • 1 c. cabbage, cut in long, thin shreds
  • 1 c. zucchini

    In large saucepan, brown bacon.

    Cook onion, celery with garlic and basil until tender.

    Stir in soups, water, tomatoes, macaroni and salt.

    Bring to boil, cover and reduce heat.

    Simmer 15 minutes.

    Add cabbage and zucchini; cook 10 minutes more until done.

    Stir occasionally.

    Makes 8 cups.
